Ingredients
- 1 cup (120g) all-purpose flour
- 1 teaspoon baking powder
- A pinch of salt
- 2 large eggs
- ½ cup (100g) granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon lemon zest (optional)
- ¼ cup (60ml) heavy cream
- ⅓ cup (75g) unsalted butter, melted
Instructions
- Prepare Dry Ingredients: Sift flour, baking powder, and salt into a bowl. Set aside.
- Whip Eggs & Sugar:Beat eggs and sugar for 3-4 minutes until pale and fluffy.
- Incorporate Cream & Butter: Add vanilla, lemon zest, and heavy cream, then slowly fold in melted butter.
- Combine Wet & Dry: Gently fold in dry ingredients to maintain an airy batter.
- Chill Batter: Cover and refrigerate for at least 1 hour (overnight for best results).
- Preheat & Prepare Pan: Set oven to 375°F (190°C), grease and flour a madeleine pan.
- Fill & Bake: Fill molds ¾ full and bake for 10-12 minutes until golden brown with a slight hump.
- Cool & Serve: Let cool for 2 minutes, then transfer to a wire rack. Dust with powdered sugar or dip in chocolate.
