Instructions

1. Prepare the Gluten-Free Sourdough Starter (Takes 5–7 Days)

  • Combine ½ cup flour and ½ cup water in a jar. Stir and cover loosely.
  • Feed the starter daily with ¼ cup flour and ¼ cup water until it’s bubbly and has a mild sour smell (ready by Day 5).

2. Mix the Dough

  • In a large bowl, mix the gluten-free flour blend and salt.
  • Add the sourdough starter, warm water, and olive oil. Mix until a sticky dough forms.

3. Fermentation

  • Cover the bowl with a damp cloth and let the dough ferment at room temperature for 8–12 hours (overnight).

4. Shape and Proof the Dough

  • Turn the dough onto a floured surface and shape it into a round loaf.
  • Place on a baking sheet or proofing basket. Cover and let proof for 1–2 hours.

5. Bake the Bread

  • Preheat the oven to 450°F (230°C) and preheat a Dutch oven if using.
  • Transfer the dough to the Dutch oven or baking sheet. Score the top with a knife.
  • Bake for 35–40 minutes until golden brown.
  • Cool completely before slicing.
