- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz (2 packages) cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
For the Pear Topping:
- 2 ripe pears, peeled, cored, and thinly sliced
- ¼ cup brown sugar
- ½ teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
Instructions
1️⃣ Prepare the Crust
- Preheat oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture firmly into the pan and bake for 8–10 minutes. Let cool slightly.
2️⃣ Make the Cheesecake Filling
- In a mixing bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing until just combined.
- Stir in vanilla extract and sour cream.
- Pour the mixture over the cooled crust and smooth the top.
3️⃣ Prepare the Pear Topping
- In a bowl, toss pear slices with brown sugar, cinnamon, lemon juice, and cornstarch.
- Arrange the pear slices evenly over the cheesecake filling.
4️⃣ Bake and Chill
- Bake at 325°F (163°C) for 35–40 minutes until the edges are set and the center is slightly jiggly.
- Let cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
5️⃣ Slice and Serve
- Once fully chilled, cut into bars and enjoy!
Notes
- Use ripe but firm pears like Bartlett or Bosc for the best texture.
- Chill for at least 4 hours (preferably overnight) for a perfect set.
